Vegan Avocado Brownies – Recipe Testing

I am deeply suspicious of avocados. I don’t particularly like their texture, or their taste which means the hailed avocado toast trend is out for me, I don’t like guacamole and the idea of putting them with chocolate makes me shudder a bit. There, I said it.

With that being said, I am fond of brownies and was feeling a little stuck for choice on what to try for this weeks foodie post. I’ve been collating pictures of all the fun vegan alternatives I’ve been eating for a while now o was toying with the idea of sharing a big old post about them, but also felt like my time off would be wasted if I didn’t spend at least part of it cooking. Kimberly on Twitter suggested avocado brownies, and here we are with them.

Too Many Avocados

If you’re looking for sweet treats on a health kick, I’m gonna slyly point you in the direction of my 3 ingredient brownies which contain only banana, peanut butter and cocoa/cacao powder, making them reasonably low sugar, low carb and not too fatty whilst also being bloody delicious. These avocado fellas have all the usual brownie ingredients, but any eggs and butter are subbed for avo, which I guess makes them only slightly healthier than your average.

Vegan Chocolate Avocado Brownies

The reason I’m starting with this not-so-healthy recipe is because when scouring the internet there was about a million variations, some far more complex, some with absolutely ridiculous ingredients (who wants a vegan avocado brownie full of spirulina, oil and black beans???) and some which seemed just a little out of my way as a non-baker. That being said, I was stuck with buying a bumper pack of avocados (why???) and so I’m planning to try a version with minimal ingredients, and maybe, just maybe the black bean recipe. Maybe. Recipe testing could become a whole new series here.

I’m still surprise by how nicely these avocado brownies turned out – gooey in the centre and crispy at the edges, sweet without being overpowering and you can’t taste even a hint of avocado. They stay soft and squidgy while being rich, dense and delicious and not being too overwhelming. They turned out actually better than most brownies I’ve ever made, so double points to them for that too.

If you’re looking for an alternative for eggs/butter in your brownies avocado could well be the one for you. Next week will be the minimal ingredient version of these vegan avocado brownies!

Ingredients
Servings: brownies, depending how thick you make them
Instructions
  1. Preheat the oven to 180 degrees
  2. I tossed all wet ingredients, avocado included into my blender to ensure no chunky parts and blended until smooth. You can also do this by hand.
  3. In a separate bowl mix all dry ingredients before combining the mixtures. This makes for a rather thick mixture, but it should be spreadable on a tray.
  4. Spread the mixture across your baking tray (I used a silicone tray but if you don't be sure to lightly grease the tray first). Pop into your preheated oven and allow to cook through for 20 minutes. Cooking time does vary depending on how thick you make your brownies so check every so often with a for - it should come away mostly clean and hot.
  5. Allow to cool, cut into portions, and try not to eat them all at once!

  1. I will most definitely be giving these a go. I’m currently in a very chocolatey mood, must be the Easter eggs I’ve been seeing everywhere so anything to ease the ‘unhealthiness’ is a must haha!
