Fruity Chia Puffs [vegan]

Once a week, Liam stays out at work on call and those are usually the days/evenings you’ll catch me cooking ridiculous amounts of food and floating round the flat in a blanket cape. The night my fruity chia puffs were born, I’d already perfected vegan grilled cheese, made almost 30 chocolate fudge power balls (another recipe you’ll be getting at some point) and watched the entire first season of Love on Netflix.

At some point came the 8pm sweet tooth and I was more than a little stuck for ideas. I wanted junk food.

Fortunately this week I’d stocked up on fruit and it also happened to be the week I decided to try my hand with the Jus-Rol puff pastry. I’ve tried to make puff pastry once in my entire life – it went badly, didn’t puff, and was a disaster I have no intention of trying again. Fortunately Jus-Rol’s puff pastry is vegan friendly meaning I’m not forced to live a life without my favourite carbs.

Over the course of the last few days, I’ve made these with strawberries, blueberries, apples, and some frozen summer fruits I had to hand.

These little beauties are quick, simple to make and tasty to boot. The recipe is customisable for pretty much any fruit you can whip up chia jam for.

They’re delicious just-warm with a coffee for breakfast, and perfect for a quick on the go treat to throw in your bag (though they could get messy if you manage to crush them in there). They’re also just one of my favourite sweet treats and I really will have to calm down making them soon, before I end up the size of a house.

If you have half an hour and some left over fruit that needs used up – hop into the kitchen and make these! Then, enjoy.

Ingredients

Instructions
  1. Preheat the oven to 200 degrees.
  2. Pop the fruit, maple syrup, lemon juice, and coconut oil into a pan on a low heat and leave them to reduce.
  3. In the meantime, roll out the pastry into one large, square-ish sheet, and cut into squares (I get between 4-6 out of this, depending on how square I manage to roll the pastry into).
  4. Once the jam mix is bubbling away, use a masher or a fork to pop any left over berries (you don't want to crush them too much, just release the juices). At this point, add in the chia seeds.
  5. Allow the mix to bubble away until it starts to thicken, before taking off the heat and leave it to sit for about 5 minutes.
  6. Once the mix has thickened, spoon around half a tablespoon of the jam mixture into the centre of each square, folding the pastry over and using a fork to crimp the edges.
  7. Once all the squares are filled, pop them into the oven and allow to cook for about 15 minutes (or until the pastry is crispy and browned).
  8. Allow to cool for a while before eating - these are tasty warm but the jam is molten and will burn your mouth pretty badly.

    1. I’m so glad you think so! My aim right now is to post at least one a week. I don’t really consider myself a good cook so IMO if I can manage these recipes anyone can! x
