We’re in that weird time of year now where we’re no longer excited for Christmas an there is no longer anything cutesy or nice about winter. We’re forced out of the cosy blankets we set up on the couch and made to slug it through all weathers into work. And this goes on for three months more. It’s times like these you need a cosy winter breakfast worth getting out of your pyjamas for, and I have the answer for you in the form of my favourite apple quinoa bowl.
Apple Quinoa Bowl: The Perfect Winter Breakfast
Quinoa is one of those foods I usually avoid because it takes a beard and a day to cook and I hate waiting for food, but recently I’ve been trying to make an effort with it (see also: lentils, beans and anything else dried that takes 10 years to cook). It goes well in sweet or savoury dishes, is filling, and although it may feel like a delicious carby treat, it’s actually pretty darn good for you.
There’s not a ton to say for this recipe except that if you’re wanting a warming, sweet, filling breakfast, this apple quinoa bowl is one for you. Apple and peanut butter are basically a combination created by the Gods, and the addition of sweet maple syrup and crushed pecan topping makes for a breakfast that tastes like a dessert – minus the guilt.
I almost always make too much quinoa because it really never does look like much, but it fills you so fast. Don’t be like me.
I like this apple quinoa bowl for days where I’m either off work or on a late shift – it takes a little extra prep but tastes like a real treat, and really keeps you going all day. The extra protein is optional, but we use Pulsin Unflavoured soya protein and although it thickens everything up a little it doesn’t change the flavour, so it’s worth getting the extra in there.
