Apple Quinoa Bowl: A Winter Power Breakfast

We’re in that weird time of year now where we’re no longer excited for Christmas an there is no longer anything cutesy or nice about winter. We’re forced out of the cosy blankets we set up on the couch and made to slug it through all weathers into work. And this goes on for three months more. It’s times like these you need a cosy winter breakfast worth getting out of your pyjamas for, and I have the answer for you in the form of my favourite apple quinoa bowl.

Quinoa is one of those foods I usually avoid because it takes a beard and a day to cook and I hate waiting for food, but recently I’ve been trying to make an effort with it (see also: lentils, beans and anything else dried that takes 10 years to cook). It goes well in sweet or savoury dishes, is filling, and although it may feel like a delicious carby treat, it’s actually pretty darn good for you.

There’s not a ton to say for this recipe except that if you’re wanting a warming, sweet, filling breakfast, this apple quinoa bowl is one for you. Apple and peanut butter are basically a combination created by the Gods, and the addition of sweet maple syrup and crushed pecan topping makes for a breakfast that tastes like a dessert – minus the guilt.

I almost always make too much quinoa because it really never does look like much, but it fills you so fast. Don’t be like me.

I like this apple quinoa bowl for days where I’m either off work or on a late shift – it takes a little extra prep but tastes like a real treat, and really keeps you going all day. The extra protein is optional, but we use Pulsin Unflavoured soya protein and although it thickens everything up a little it doesn’t change the flavour, so it’s worth getting the extra in there.

Ingredients

Instructions
  1. Pop your quinoa into a pan with the almond milk and cinnamon and set away on a medium heat to cook the quinoa - I like to add a little more milk than is necessary because almond milk boils super quickly and turns to nothing. Stir regularly, cook through for about 15 minutes.
  2. Take off the heat and chop in an apple. Leave to sit for 5 minutes for the apple to warm through and soften, and the almond milk to soak up. Stir in the maple syrup.
  3. Serve with a drizzle of warm peanut butter and a dusting of crushed pecans!

  1. Oh I’m definitely going to give this a go. I thought quinoa was bad until I tried brown rice, that stuff takes a decade too cook, it’s ridiculous! I love peanut butter and apples and also almond butter with apples! A real match made in heaven.

    1. I know the struggle! Quinoa isn’t so bad if you cook in bulk the night before or whatever, sadly I always forget and end up waiting at breakfast haha x

  2. That apple quinoa bowl looks really yummy! It’s especially inviting since I’m a vegetarian. Unfortunately I’m lazy so If I tried making some I’d probably make multiple servings (a week’s worth) and store it in the fridge to reheat. I may try it.
