3 Ingredient Vegan Brownies

You know those days where you just want to eat everything in sight? I had quite a few of those after Christmas when I was trying to actively stop eating everything in sight as I had for about two straight weeks.

The good news is that brownies are a thing. The better news is that if, like me, you have very little baking ingredients in the house and/or you have the baking skills of a moose (also me), 3 ingredient vegan brownies are a thing. Are you ready for the best news yet? They’re 3 pretty healthy ingredients, as far as chocolate brownies go.

If you’re after rich, fudgy brownies that are exactly as indulgent as you’d want a brownie to be, then look no further.

Flourless healthy brownies?

I originally stumbled upon this recipe on thebigmansworld.com after falling down the Pinterest rabbit hole. Healthy brownies? Simple 3 ingredient vegan brownies? They had me at hello.

What Arman says in his post about them being ugly little buggers couldn’t be any more true. He’s right, there is no way to make a flourless brownie attractive. They sort of balloon up in the oven and then shrink back to size once they’re out and the result is a sort of shrivelled little brownie. But he did manage to make them damn tasty, and for that I can only thank him.

Arman’s original recipe calls for a blender if you don’t like banana bits but h e l l o they’re delicious – so I just mash it in a bowl and throw it together.

Better yet is that they make a great base for a more nutritious snack, if that’s what you’re looking for. Alright, so adding to them takes away from being 3 ingredient, but I have found that if you add a scoop of protein powder or some flax seed/chia seed to the mix you can still make a damn good brownie with minimal effort and little more than an extra tablespoon of almond/dairy free milk of your choosing.

Ingredients
Servings: brownie bites (or one sheet if you prefer)
Instructions
  1. Melt down the peanut butter in a microwaveable bowl while mashing the bananas.
  2. Stir all ingredients together, adding more of less cocoa powder depending on how rich you like them.
  3. Spoon onto your baking tray or into greased/lined muffin tins (I prefer them bitesized but this is up to you)
  4. Pop into a preheated oven at 190 degrees for around 20 minutes - keep an eye on them as they can turn quickly from delicious to charcoal!

    1. Ooh I’m afraid I don’t sorry! I imagine any nut butter would work if there are others you are able to use but it takes a little experimenting I think. If it’s just the taste of peanut butter you don’t like, you really can’t taste it much in these brownies – it mostly just works to bind everything and keep them squishy in the middles 🙂 xx

  1. Not gonna lie but if I saw these in the shop I wouldn’t give them a second glance. Now that I know the ingredients HELLO BROWNIES! Peanut butter gives me life, it sounds delicious. I’ve been the same after Christmas, I’ve just been craving chocolate every morning because it was the first thing I ate during advent. (The little chocolate from my advent calender.)

    1. Haha I’d be exactly the same! I was so impressed with how they turned out though and really they’re not nearly as bad for you as your average brownie. They may be ugly but they’re still the best :’) x
